PRODUCTION PROCESS OF YELLOW STRIPED FISH AT AN PHAT JSC

Step1: At An Phat JSC, dried yellowstripe scad is produced according to a clean, closed process from the step of importing raw materials to the finished product stage according to HACCP standards. Raw fish are purchased directly from fishing boats and ships during the day.

Step 2: Next, start the preliminary processing, cut off the head, clean the intestines and split in half along the spine. Then, rinse with clean water.

Step 3: After the preliminary processing, the fish is marinated with spices, the marinated fish is placed on large fish drying racks and then dried directly under the sunlight

Step 4: Normally, the ideal time to dry fish is from 6am to 5pm under the sunlight. At the end of the day, if the fish is not completely dry, the workers will dry the fish until it reaches the standard humidity level before packaging.

Step 5: After being dried to standard, the fish will be arranged on small trays, the fish and trays will be put into packaging and vacuum-sealed. After being packaged to standard, they will be brought to the warehouse for dry goods storage and distributed to consumers.

Of which, anchovies account for 66%, yellowstripe fish accounts for 14%.
